Memorial Day weekend is here and hopefully you all will be enjoying fabulous food and friends. My weekend will include family and friends gathered around the grill.

Just this past week, I put my smoker to good use. I had a big pork roast that sat and smoked all day. The menu included BBQ Pork Sandwiches that are topped with Fried Dill Pickles, and Cole Slaw. While it was absolutely delicious, the first thing my husband did once dinner was done was grab his TUMS.

The next day, I then turned that extra pork into some delicious Cuban Sandwiches (you guys know nothing goes to waste at my house).
