Old El Paso Beyond Tacos + A Giveaway

I know I have told you guys before that I love Mexican food, we actually have regular Taco Nights at the house :)  But, Old El Paso is challenging us to Go Beyond Tacos.

When most people think of Mexican Food, they think of tacos — but there’s so much more to Mexican than that!  Old El Paso® invites you to get inspired and explore the possibilities beyond tacos for your family’s next Mexican night with delicious recipes for enchiladas, quesadillas, fajitas or burritos using your favorite Old El Paso® ingredients.

My boys love Fajitas, they get to assemble them all by themselves and they are delicious. But, I have to admit, I have never made BBQ Chicken Fajitas. BBQ and Mexican…now that is guaranteed to be a hit in my house! I think I may just haveto add that to my weekly menu here shortly ;)

Here’s a few recipes that caught my eye while on OldElPaso.com:

• BBQ Chicken Fajitas
• Easy Creamy Chicken Enchiladas
• Cheesy Bacon Bean Quesadillas

You have to check out the website – the recipe section is so easy to use! You can actually select different options…Cook by meal type, main ingredient or even special occasion. They really tailor it to you and what will be useful to you. Which I can really appreciate, with two boys and two dogs in the house we are always going, going, going, so a recipe site option that is quick and easy to use is fabulous.

I think the Seafood Enchiladas sounds fun and the Green Chile Lasagna! We eat Mexican food at out house at least 2 times a week! We love spicy food, we use tortilla for everything, make breakfast burritos, nachos, and even taco stuffed pasta shells! Can’t wait to try a few new recipes in the kitchen!
